White Lily Flour for soft, light biscuits!
White Lily Flour was not on the shopping list when I visited a brand new "Fresh Market" that had just opened in our area. The store itself was just plain beautiful. As you walk around one section is more lovely than the next. No high shelving here to interrupt sightlines, just one magnificent display of food after another. Then I saw it - the package that no other grocers carried....
The bag itself was very nicely designed, with a sort of old-fashioned black and gold script on a pure white background. This was enriched, bleached and all-purpose, made from pure, soft wheat, no pussy-footin' around, ok? When I returned home I immediately tried a batch of biscuits. That's 2 cups flour, 1 Tbsp baking powder, 1 tsp salt, 1/4 cup shortening, 3/4 cup buttermilk. - You could jazz this up by adding a teaspoon or two of your favorite herb or spice.
Mix everything together and roll out to about half an inch thich, then cut out your biscuits. Brush some buttermilk on top and bake at 500 degrees for about 10 minutes, depends on your oven. Remove from the heat and top with butter, maybe add a dab of jam. Simply delicious!
