Whiskey cake for your special libation occassion...



When I decided to make whiskey cake, my first stop was the local liquor store for a bottle of Bushmills Irish whiskey. It was St. Patrick's Day, afterall, and the recipe from "The Complete book of Baking" called for 2 cups of the best. I also had to pick up a few other items before preparing this very special dessert.



Ok, that's 3 cups golden raisins, 3 cups regular raisins, 2 1/2 cups brown sugar, 2 cups black tea and 2 cups liquor. Stir it all together and soak this overnite so that the dry fruit is totally saturated with happiness.

In the morning, add 3 cups flour, 3 eggs, 1 Tbsp baking powder and 2 tsp pie spice (apple or pumpkin). Mix it all together and put in a 9 x 5 loaf pan, 8" cake pan or 8 x 8 brownie pan that you've lined with parchment paper. Preheat the oven to 375 degrees.

Take the cake out of the oven after 1 hour and let it cool for a while before removing from the pan to a wire rack. When you're ready, slice into pieces and serve it up. My wife says it would be great with Vanilla Ice Cream or whipped cream. Sounds good to me!
