Vegan cake easy to make!
Vegan cake, who knew it would be so easy to make? My daughter is home from school and I knew she'd like it. Also, I needed to bake dessert for my neighbors get together and what on earth would suit both the neighbors and my kids? I turned to the Moosewood Restaurant Book of Desserts and they came through with flying colors! If you're in a hurry, they call this their 6 minute cake (but I think it took 10 minutes).

I started with: 1 1/2 cups unbleached white flour * 1/3 cup unsweetened cocoa powder * 1 tsp. baking soda * 1/2 tsp. sea salt * 1/2 cup veg. oil * 1 cup cold coffee * 2 tsp. vanilla extract * 2 tbsp. apple cider vinegar. Sift the dry ingredients together, separately mix the wet stuff together except for the vinegar. Add the wet mix to the dry, stir and then add the vinegar. The reaction as you stir in the Bragg's apple cider vinegar is very interesting - kind of like a kitchen science experiment that tastes good.
cornmeal muffins anyone?

Preheat your oven to 375 degrees and cover the bottom of cake pan with parchment paper. Oil sides of the pan and dust with flour. Add the cake mixture to the pan and bake for 25 to 30 minutes, allow to cool.

The chocolate glaze I used consists of 8 oz. semi sweet chocolate, 3/4 cup hot water and 1/2 tsp. vanilla extract. Refrigerate the cake for at least 30 minutes after spooning on the glaze. My cake kind of caved in the middle, so my wife added some candies to make it look like we planned it that way. A dusting of confectioners sugar and some green sugar sprinkles complete the festive cake. Now, go to the neighbors party and even your daughter might have a slice!
