Sweet biscuits with currants, so light and fluffy...


I saw a recipe for sweet biscuits in the "Moosewood Restaurant Book of Desserts". It looked easy enough to put together and I changed it up a little by adding currants to the mix.

Ingredients * 2 cups self-rising flour * 1/3 cup sugar * 1 tsp baking powder * 1/2 tsp baking soda * 1/4 tsp salt * 1/2 cup cold unsalted butter * 1 egg * 2/3 cup buttermilk * 1 tsp vanilla extract * 1/3 cup currants



Mix everything together (I grated the butter into the mix with a cheese grater) and put the dough on a well floured counter. Knead a few times, adding more flour as needed. At this point, rather than cutting the biscuits into squares, I decided to spoon them onto a sheetpan, the same way that I do with scones. These sweet biscuits really do resemble scones, and you can call them that if you like.

Sprinkle a bit of sugar on top of each treat just before you put into a 400 degree preheated oven for 10-15 minutes, until golden brown. Rotate the sheetpan front to back halfway thru the bake time.

Remove the small, soft cakes from the oven and cool on a wire rack. These are so light and fluffy, you are really going to enjoy them. A glass of milk or a cup of coffee or tea are a great combination. While you're enjoying them, you can dream up your own variation of this recipe by incuding your favorite dried fruit. Enjoy!
