Shortcake biscuits sure hit the spot...



Shortcake, what a great name for a biscuit. These treats are sweet and easy to make with just a few simple ingredients. I started with a recipe from "The Best of Shaker Cooking" and changed it up a little. Here are the ingredients:

*2 cups self-rising flour * 3/4 cup unsalted butter * 1/2 cup brown sugar



How on earth could I make sweet biscuits with these few, simple ingredients? Well, as it turned out, I added * 1/2 cup buttermilk * to the mix. I couldn't bring the dough together without the added liquid. After cutting the butter into the flour and brown sugar, the buttermilk gave it just the right boost.



I then rolled out the dough to 1/2 inch thick and cut out 12 biscuits. Place on a cookie sheet, into a preheated 350 degree oven for 16-20 minutes, depending on your oven, to a light golden color. When they are done, remove from the oven to a rack and let them cool. Then enjoy them, as they are, with some jam or maybe whipped cream and berries!
