Sesame biscuits made with whole wheat flour and toasted sesame seeds!





I made sesame biscuits because I liked the idea of toasting the seeds before adding them to the flour mix. I use various toasted seeds in my rendition of energy cookies and the thought of using them in biscuits intrigued me....

Ingredients * 2 Tbsp sesame seeds * 1 cup whole wheat flour * 1 cup unbleached flour * 4 Tbsp butter * 3/4 cup plus 3 Tbsp milk * 3/4 tsp salt * 1 Tbsp baking powder



Toast the seeds for about 5 minutes over medium heat (don't burn 'em). Combine dry ingredients, saving 1 tsp of sesame seeds for topping. Blend in the butter with hands or knives until a crumbly mix is formed, then add milk, saving 1 Tbsp for topping. Put dough on a floured countertop and knead 5- 8 times, then roll out to 1/2 inch thick.

Cut out the biscuits and place on a greased sheetpan, brush with milk and top with remaining seeds. Bake at 425 degrees for 12-14 minutes, depending on your oven. Remove from oven and serve warm.
