Sesame biscotti with honey, made from scratch!





The recipe for sesame biscotti with honey caught my eye in the 'King Arthur Flour Cookie Companion'. I love to make biscotti, they're very easy, and who doesn't like honey and sesame? Oh, my kids......oh well, too bad! My wife will love these and after years of modifying our food choices to please tamer palettes, it's our turn to enjoy.

I started with * 2 Tbsp butter * 2 Tbsp sugar * 2 eggs * 2 Tbsp sesame oil * 1/2 cup honey * 2 cups flour * 1 1/2 tsp baking powder * 1/4 tsp salt * 1 egg white * 2 Tbsp sesame seeds



Preheat your oven to 350 degrees and place parchment paper on a baking sheet. Beat the butter and sugar together until creamy. Add the eggs, sesame oil and honey, continuing to mix.

Then add the flour, baking powder and salt and bring ingredients together in a moist dough. Shape into a 12-14 inch log, 3 inches wide, 3/4 inch high. Brush the log with the egg white and sprinkle on the seeds.

Bake for 30 minutes then remove from oven and cool for 20 minutes. Sprinkle with a spritz of water and after 5 more minutes, slice into 3/4 inch pieces. Separate them on the sheet, standing up, and cook for 40 additional minutes at 325 degrees.

Now go to bed (if you did this at night, like me) and look forward to your morning sesame biscotti with your first cup of coffee. Just for fun, offer one to one of your kids and other members of your household and see how they like it. Hey if their taste isn't as sophisticated as yours, I guess you'll have to put them in a glass jar and work your way through them over the next week or so!
