Let them eat scones!


The Cheese scones I made the other day, or - cheese biscuits as my neighbor calls them, are very good. In a recipe from the Cheeseboard Bakery cookbook, these rich and flavorful treats are a sure winner. That's an understatement, what I meant to say was that warm and fresh from the oven, they may bring you to your knees... sure to bring smiles to the faces of your friends and family.

They are filled with great ingredients like 1 cup buttermilk, 1/2 cup heavy cream, 8 oz. cheddar cheese, 1/2 cup plus 1 tbsp. butter, 1 egg, 3 cups unbleached ap flour, 2 tbsp. cornmeal, 1 tsp. seasalt, 1 1/2 tsp. baking powder, 1/2 tsp. baking soda, pinch of cayenne pepper......well how could they taste anything but great?

Some have said that one of these biscuits with a side of cottage cheese and salsa makes a great lunch, or lunch starter - depending on your appetite. It's great to have some on hand for the kids after school snacks, too!
