Quick Breads made of pumpkin



Baking quick breads that are fast and easy to make are a favorite of mine at holiday time. Today I referred to "Kathleen's Bake Shop Cookbook" and made a pumpkin bread treat. It turned out to be a real winner! Rave reviews, people...read on. If you bake these, you will not be disappointed, I promise.



I started with wet ingredients in one bowl and dry in another. * 2 cups sugar * 3 cups flour * 2 tsp. baking soda * 1/2 tsp. salt * 1 tsp. cinnamon * 1 tsp. ground cloves * 1 tsp. nutmeg * 1/2 tsp. allspice * 1 cup chopped walnuts (optional) -I used chocolate chips instead * 1 cup vegetable oil (canola) * 4 eggs * 2 cups mashed pumpkin * 3/4 cup spring water.



Mix the wet into the dry and grease two 9x5x3 inch loaf pans. Pour evenly into the 2 pans and place in a pre-heated 350 degree oven for 50-60 minutes depending on your oven. This smells so good as it cooks, the anticipation will build...your family won't be able to wait!

The author says that this moist and spicy treat is best enjoyed spread with cream cheese and a hot cup of tea on the side. Having had some, fresh and hot from the oven, all I can say is enjoy it to the last crumb.
