Pumpkin spice muffins warm up a cool fall day!

I never thought I'd make pumpkin spice muffins today, to be honest. I mean, why should I? Isn't it easier to just buy such treats at the grocery store? Sure the ingredient list on the box reads like the periodic table from your old chemistry class, but so what? Well, it is trick-or-treat night here in the neighborhood and my daughter is having some friends over, so.......let's get that oven cookin'!Ingredients * 1/2 cup butter * 1 cup light brown sugar * 2 lg eggs * 3/4 cup cooked pumpkin * 2 cups cake flour * 1/2 tsp baking soda * 1 1/2 tsp baking powder * 1/2 tsp salt * 1/2 tsp cinnamon * 1/2 tsp nutmeg * 1/2 tsp ginger * 1/2 tsp allspice 1/2 cup buttermilk * 1/2 cup chocolate chips (or nuts, if you prefer)

Cream the butter and add the brown sugar, beating until fluffy. Add the eggs and pumpkin continuing to mix. Sift all the dry ingredients together separately, then add to the mix, along with the buttermilk. Once everything is nicely brought together, add the chips (or nuts) and make a final stir by hand. Spoon the batter into a greased muffin tin and bake in a preheated 350 degree oven for about 25 minutes, depending on your oven. Remove from oven and place tin on a wire rack to cool. For a final touch, sprinkle confectioner's sugar on top and leave out for the goblins that are stopping by.
