Pizza for breakfast, why not?



Baking pizza at home. It had been a long time since I'd made one from scratch and on New Years Day we had about a dozen friends visiting. They were hungry and I had some sourdough aching to be fashioned into something edible. In addition, for Christmas, I'd gotten a present of "American Pie" by Peter Rinehart. This book deals with a chefs Trans-Atlantic search for the worlds great pizza. Thus inspired, I determined to make a sourdough crust and top with eggs, cheese, hashbrowns and bacon for the hungry masses.

After mixing the dough and letting it rise for a few hours, I separated it into 4 doughballs and shaped the crust. I then pre-heated the oven to 550 degrees for about 50 minutes with the baking stone in place (middle rack). On the first pie try, I put the crust directly on the stone, then loaded the liquidy mix of ingredients. this resulted in a mild disaster, eggs and cheese running, etc. On the second pie, we put the ingredients on top saving the precooked bacon for last and then put the sheet pan on the stone, only slightly less messy. The crust directly on the baking stone yielded a better done pie.




Ah yes, ingredients. Make your favorite 6 egg omelet. I used free range eggs, milk, shredded cheese, Dr. Praegers hashbrowns and 8 oz. precooked (microwave) bacon. At the super high temp (550 degrees) it only takes 7-9 minutes to cook. The next time I do this I may lightly scramble the eggs to prevent the runny mess. But, all in all, I would say it made for an exciting New Years morning breakfast that won't soon be forgotten. Happy New Year to all!
