Pina colada cakes for summer fruit lovers



If you like pina colada, you'll love these sweet, small cakes filled with pineapple, coconut and raisins. Top it all off with homemade buttercream frosting and you'll either go into sugar shock or a diabetic coma, take your pick.

Ingredients * 2 cups flour * 1/2 cup sugar * 1 tsp baking powder * 1/2 tsp salt * 1 cup golden raisins * 1/2 cup coconut flakes * 1 egg * 1 tsp vanilla * 2 Tbsp butter, melted * 1 can crushed pineapple * 2 Tbsp pinacolada liquid mix (optional)

Sift together the dry ingredients, add the raisins and coconut. Separately combine egg, vanilla and butter. Add wet ingredients to the dry and mix until blended. Put batter in your favorite loaf pan, or mini loaf pan like I did. Bake at 350 degrees for 40 minutes for mini cakes, 50-60 minutes for large loaf.

Remove treats from the oven and cool on a wire rack. Now whip up some buttercream frosting: 5 Tbsp soft butter * 3 Tbsp cream *3 cups confectioners sugar * 1 tsp vanilla
