Orange biscuits made with OJ and marmalade
Orange biscuits, where on earth did this idea come from? I must give credit to Gail Sher, whose book "From a Baker's Kitchen" (20th anniversary edition) provided the recipe. The nice thing about this is that once you have the basic dough, you can change it by adding cheese, herbs, dried fruit, etc. to your taste.
Ok, let's begin: *2 cups sifted unbleached AP flour, 2 3/4 tsp baking powder * 1/2 tsp salt * 1/3 cup unsalted butter * 1/2 cup milk * 1/4 cup orange juice * 2 Tbsp orange marmalade * 1/4 cup melted butter * sugar to sprinkle Mix the dry ingredients and cut in the butter to a coarse meal texture. Add milk, OJ & marmalade, mix gently to bring together. (add a little more milk if needed) Put dough ball on a floured board, lightly knead, roll out to 1/2 inch thickness.

Now cut the dough into 2 inch biscuits and put on a baking sheet. Brush with the melted butter and sprinkle tops generously with sugar. Put in a preheated 450 degree oven for 10-14 minutes until golden brown. This is a fun treat to make. I can hardly wait to see how my daughter will enjoy them. Maybe a spoonful of jam, or perhaps some whipped cream? Put me down for both!
