Oatmeal cookies that vanish...



I know I should eat more oatmeal, seeing how it's a wholegrain superfood and all....but when you take a box of Quaker oats and make it into cookies. well then, I'm all about eating healthy!



So I reached into the pantry and grabbed the cardboard cylinder containing the aforementioned superfood and what does it say on the side? ..."vanishing oatmeal raisin cookie recipe under lid" ...What a tease, now if I open the container I have to make the cookies, right? My daughters are home - one goes back to Art school tomorrow - and I'm sure they'd like a snack, so let's do it!



That's 1 cup softened butter, 1 cup brown sugar, 1/2 cup regular sugar, 2 eggs, 1 tsp. vanilla extract, 1 1/2 cups flour, 1 tsp. cinnamon, 1 tsp. baking soda, 1/2 tsp. salt, 3 cups Quaker oats, 1 cup golden raisins. Preheat your oven to 350 degrees and mix first the butter and sugars, then the eggs & vanilla, then the dry ingredients, lastly add oats and raisins. Scoop heaping tablespoon or small ice cream scoop sized dough balls onto ungreased cookie sheet. Bake 10-12 minutes or golden brown.
