Blueberry and cornmeal muffins

muffins on my mind... I picked up a cookbook the other day, "Are you Hungry Tonight? - Elvis' favorite recipes". The blueberry and cornmeal recipe was featured in the first chapter, 'breakfast was served all day' so I decided to give them a try. After all, if they were good enough for the King, who am I to argue? They also meet my other criteria, being easy to make, so let's get started.

That's 1 1/4 cup cornmeal, 1 cup flour, 1/4 cup sugar, 1 tsp. baking soda, 1/2 tsp. salt, 1/4 cup brown sugar, 1 egg, 1 cup buttermilk, 3/4 cup corn oil, 1 1/2 cups fresh or frozen blueberries. I used canola oil since I didn't have corn oil and frozen blueberries instead of the very expensive fresh ones flown in from another hemisphere this time of year.

This recipe makes 12 treats and cooks for 20 minutes at 425 degrees, a greased standard tin does the job. The result is a southern themed snack with corn meal setting the tone. Just sit back, enjoy one with a cup of Iced Tea and a friend... and listen to some Elvis tunes....
