Irish Scones are perfect for St. Patrick's Day!





I found a great recipe for Irish scones in "The Cheese Board Collective Works". They are a savory treat with a touch of sweetness. They are fun to make, beautifully flaky, with golden raisins, buttermilk and caraway seeds.

Start with 3 1/2 cups flour, 3/4 tsp baking soda, 1 Tbsp baking powder, 1/2 tsp salt, 3/4 cup old fashioned oats, 2 Tbsp Caraway seeds, 2 1/2 sticks cold unsalted butter (1 1/4 cups), 1 cup golden raisins, 1 1/2 cups buttermilk.



Mix everything dry together, then cut in the butter at low speed for 4 minutes in your mixer. Add raisins and buttermilk, mix lightly, then let it stand for 10 minutes to allow the liquid to soak into the oats. Roll out the dough to a 1 inch thick rectangle, about 6 X 10 inches. Fold it in half, roll again, repeat 2 more times. Then cut the dough in half lengthwise and cut each half in 6 triangular pieces.

Put on a sprayed sheetpan and into a 375 degree preheated oven for 30 minutes or until light brown. When they are finished, open the oven and feast your eyes on a treat that is bound to elevate your social standing in the neighborhood. These scones are perfect for St. Patty's Day... they taste great, they look fantastic and you made them from scratch!
