Griddle cakes are a healthy way to start your day





Why griddle cakes? Well, saturday mornings are a bit slow in my house and I wanted to give the kids a reason to get up and get out of bed. It also just so happened to be November 10th, The Marine Corps Birthday. You see, a long time ago I proudly wore that uniform so how better to celebrate 232 years of service and sacrifice? Well, my reasoning may not make any sense - but thus motivated, I followed a recipe from "The Best of Shaker Cooking".

Ingredients * 1/2 cup yellow corn meal * 1 cup boiling water * 1/4 cup pumpkin pulp * 7/8 cup scalded milk * 1 cup flour * 1 egg * 1 tsp allspice * 1 1/2 tsp sugar * 3/4 tsp salt * 2 tsp baking powder



Mix cornmeal and boiling water and set aside for 5 minutes. Then add the pumpkin and milk and stir well. Mix the rest of the dry ingredients and add to batter. Finally, add beaten egg and stir well. Ladle the batter onto a hot pan and flip once bubbles appear all over. Turn over and cook until crisp and golden. Serve with butter and syrup, some confectioners sugar is nice for the unconventional among us.

I think the Shakers had it right - a hearty breakfast followed by a hard days work. A simple approach to life that we could all learn from....no microwaves, no treadmills, no ADD/ADHD prescriptions and they made great furniture to boot!
