Fruit torte made from pears and currants, so easy to make...





I found this fruit torte recipe in my new favorite cookbook, "The Magnolia Bakery Cookbook". Let me just say it was incredibly easy to make, tastes great and dresses up real nice with a dollop of whipped cream.

Ingredients: *1 stick butter * 1 cup sugar * 2 eggs, room temp * 1 cup flour * 1 tsp baking powder * 1 tsp vanilla extract * 1 pear, sliced * 1/4 cup currants * 1 Tbsp cinnamon sugar

Start by creaming the butter and sugar for about 3 minutes. Add the eggs one at a time, mixing well. Then add the flour, baking powder and vanilla, again mixing well. Pour the batter into a greased cake pan or brownie pan and lay the sliced pears on top. Sprinkle currants evenly on top and put in a preheated 350 degree oven for 45-55 minutes, depending on your oven.

Another great thing about this fruit torte is that you can change it as you like by using your favorite fruits. I changed it slightly by substituting currants for the cranberries called for in the recipe. Apples, berries, peaches, cherries....you name it. Make it square, make it round, just get busy and bake it!
