English biscuits sure look like cookies to me!


English biscuits are really cookies, if you ask me. Maybe it's a transoceanic naming mixup. Anyway these treats are full of fiber and can be dressed up with a topping of jam if you have a sweet tooth, like me.

Ingredients * 1 stick unsalted butter * 3/4 cup powdered sugar * 1 1/2 tsp vanilla extract * 1/4 cup milk * 2 cups whole wheat flour * 1 tsp baking powder

Cream the butter, then add the sugar. Next, add the vanilla and milk, continue mixing. Lastly, add the flour and baking powder, mixing all together. Roll out dough to 1/8 to 1/4 inch thick.



Cut out the biscuits into desired shape and place on a sheetpan covered with parchment paper. Put in a preheated 350 degree oven for about 15 minutes, depending on your oven and the thickness of your dough, until golden brown. Remove from oven and cool on a wire rack.
