dinner for 2, make it pizza



What's for dinner? I often hear that question from my teenage daughter, but this time I had a plan. I had a dough ball left over from pizza cooking last week, so I thawed it out and got sauce and cheeses from the fridge. A lot goes into homemade pizza, but it's worth the extra time.



Next, following instructions from "American Pie" by Peter Rinehart, I preheated the oven to 550 degrees with the pizza stone in place. After 45 minutes I did my best to turn the dough into a 9-10 inch, oddly shaped crust. (looks like a map of USA) Then I added 1/4 cup fresh 'pizza sauce' from the local grocer, and about 2 oz. of shredded mixed mozzarella and provalone cheese. Lastly, I sprinkled 1 tbsp. of grated Parmigiano Reggiano.

Just 8-9 minutes later, it was ready! I cut the pie in quarters and we enjoyed this very nice treat. My kids say the result was terrific - and they don't normally shower me with praise..... afterwards, a glass of red wine in hand, I resolved to make many more pizzas this year. Maybe I'll get better at it! Ciao!
