Cranberry scones made from scratch by you!



I made cranberry scones yesterday after seeing a recipe for them in "Southern Living Homestyle Cooking". The recipe called for dried cherries and heavy cream, but I substituted cranberries and buttermilk, since I had those items on hand

Ingredients * 2 cups flour * 3/4 cup dried cranberries * 1 1/4 cup buttermilk * 1 Tbsp plus 1 tsp lemon zest * 1/4 cup sugar plus 2 Tbsp sugar * 2 Tbsp melted butter * 1/2 tsp salt * 1 Tbsp baking powder



Combine the dry ingredients in a bowl and add berries and 1 tbsp lemon zest. Then add the buttermilk and stir with a fork to bring together. Put dough on a floured surface and knead 4-5 times, then roll out to an 8 inch circle. Cut into 8 wedges and brush with melted butter. Combine remaining 2 Tbsp sugar and 1 tsp lemon zest and sprinkle on top.

Bake for 20-25 minutes at 400 degrees until golden. Remove from oven and serve warm or allow to cool, as you like.
