These cookies are energized!





This energy cookies recipe is from my favorite baking guide of all time, "Brother Juniper's Bread Book". Peter Rinehart, the author, describes them as trail mix in a chip. I have had rave reviews for them, and given the ingredients, you can see why. When you tell people what is in these treats, they flip out! Seeds are good for you, helping the body to fight disease and a good source of vitamins and minerals. So go to the local health food store with your ingredient list and get baking!



Ingredients * 4 cups unbleached flour * 2 cups rolled oats * 1 cup honey * 1 cup raisins * 1/2 cup sunflower seeds * 1/2 cup sesame seeds * 1/2 cup pumpkin seeds * 2 tbsp. flax seeds. Add to that 1 cup canola oil * 1 cup semi sweet chocolate chips * 1 tsp. baking powder * 1 tsp. sea salt and water (1 cup hot water to plump the raisins) - hey doesn't this sound good? You can also get creative and substitute craisins for raisins and carob for the chocolate chips.

A 350 degree oven for about 14 minutes does the job. Most of this batch is going to my Doctor's office. ( I'm trying to fatten them up) But really, their business is making people feel better and so is mine. The rest of the batch of 2 dozen or so my family and friends will enjoy, and I should probably take the time to send some to my daughter, who's away at college - in Rome!
