Chocolate chip muffins made fresh and easy by you!



I made chocolate chip muffins because of a gift I'd recently received. Hey, it's not every guy that gets a muffin tin for his birthday. But I did and I was mildly happy, I mean a new Mustang convertible would've been nice (red), but I understand family budgetary issues, etc. So anyway, bakeware in hand, I set out to make something that would be welcomed by the other residents of my home.



The "Complete Book of Baking" has an easy recipe for double chocolate chip muffins:* 1 3/4 cups flour * 1/4 cup cocoa powder * 1 Tbsp baking powder * 1/2 tsp salt * 1/2 cup sugar * 3/4 cup semi sweet choc chips * 2 eggs * 1/2 cup vegetable oil * 1 cup milk * 1 tsp vanilla extract.



First, preheat your oven to 400 degrees. then, mix all the dry ingredients together. In a separate bowl, mix the eggs and other wet ingredients. Add the wet to the dry and mix just enough to bring it all together. Then grab your favorite tin and spoon the batter into greased cups, about 3/4 full. Cook for about 20 minutes, depending on your oven.

Remove from the oven and allow to cool on a wire rack. You can enjoy these treats just as they are, with a sprinkle of confectioners sugar or how about with some buttercream frosting? However you enjoy them, congratulations on making them yourself, from scratch. The way I see it, we're just doing our part as bakers at home - making the world a happier place!
