Butterpecan cookies that melt in your mouth...
Butterpecan cookies, so light and crunchy, if you like nuts - you have got to give them a try. I got this recipe from 'Everyday Food' that small food digest available at your grocers checkout. Here's the simple list of ingredients: 1 cup flour, 3/4 cup chopped pecans, 1 stick unsalted btr., 1/3 cup sugar, 1 tsp. vanilla extract, 1/8 tsp. salt.

Preheat your oven to 350 degrees and toast the pecans on a sheetpan for 6 minutes. Cream the butter (room temp) and sugar for a minute in your mixer, then add vanilla, salt and flour. Fold in the nuts. Scoop out heaping teaspoon size cookie balls and roll them in sugar. Place on a sheetpan and lightly flatten.

I got 16 butterpecan cookie portions and put them in the oven for 15 minutes. When they are done, put on a wire rack and sprinkle with sugar. Now your only problem is who to share them with? Mine are probably going to my Doctor and his office staff, since I'll be seeing him soon and they take real good care of our family. Thanks Doc!
