Best Buttermilk Biscuits the package said. I grabbed the bag of unbleached, self-rising flour from our friends at King Arthur Flour and decided to give it a go. This flour is made from low protein, soft red winter wheat with the leavening and salt already measured in. After lightly kneading the dough, I cut out biscuits and put them on a sheetpan. I then brushed the tops with buttermilk, then into a 450 degree preheated oven for 12-14 minutes. Just make sure they're golden brown, there's nothing worse that a burnt biscuit. Then plate 'em up!

A friend told me these were so light and crisp that they reminded her of a croissant. I have learned to accept compliments when they are so generously offered, but you'll have to excuse me for now - breakfast is ready and it's time to eat.
