Buttercream frosting by James Beard





Buttercream frosting came as a suggestion from my daughter when she tasted my spice muffins. I guess they were a little dry for her, with just confectioners sugar on top. Ok, so where to look for a recipe?

My favorite reference and all purpose cookbook, "James Beards American Cookery", of course. I always have confidence when I'm taking advise from one of greatest-ever chefs that America has ever produced. The man was a gentle culinary giant, hailing from Oregon and he knew his stuff.

Sure enough, on page 695, his recipe for frosting came through in flying colors.

Here you go * 1/3 cup softened butter * 3 cups confectioners sugar * 3-4 tbsp. heavy cream * 1 tsp. vanilla extract.

Cream the butter and sugar together, add the cream, then the vanilla, mix everything together until it looks like something you want to bury your face in and that's it!

The frosting really sets off the spice muffins, what a combination... hmmm, creamy on top, spicey through and through......whew, I feel like I'm king of the world when I have one of these. Try them, you'll love 'em!
