Brie in puff pastry with apricot jam





I learned this quick and easy baked brie recipe from a family friend. You simply take a medium size wheel of cheese, (I used 15oz. wheel) a 12 oz. jar of apricot preserves and a package of your favorite frozen puff pastry. Lay out the first sheet of puff pastry on a baking pan that has been sprayed with oil. Put the cheese wheel in the center of it and cover the top with the apricot preserves. Then draw up the corners of the pastry and use strips of the 2nd sheet to cross the top, from corner to corner.

Give the dough a nice egg wash and bake at 350 degrees for about 40 minutes, give or take. I think you'll be pleased with the results, just serve with crackers and your favorite beverage. My kids love this treat and it's easy to reheat later should it not all disappear in one sitting.
