Breakfast cake made with butter, eggs, sugar and vanilla for a special treat...





This breakfast cake recipe came from the "Magnolia Bakery Cookbook" and is something they call breakfast buns. Let me tell you, this treat is so rich that I had to change the name to cake just to be fair. I've had buns and I know something about them. This is no bun. Maybe in an old world, middle ages sense of the word you could call it a bun, but nowadays - this is cake.

Ingredients * 3 sticks butter, soft * 6 eggs, room temp * 2 1/4 cups sugar * 3/4 cup milk * 2 tsp vanilla extract * 3 cups flour * 1/2 tsp baking soda * 1/2 tsp salt *



Combine the dry ingredients and set aside. In your mixer, cream the butter and sugar for about 3 minutes. Add your eggs, one at a time, continuing to mix. Then add the flour mix and the milk and vanilla, alternating between wet and dry until the batter comes together nicely. Spoon the batter into a greased mini loaf pan or muffin pan as you like. Place in a preheated, 350 degree oven for 25-30 minutes until golden brown and a toothpick in the middle comes out clean.

Remove pans from the oven and allow to cool completely. At this point, the recipe calls for a glaze of confectioners sugar mixed with water, but these are so sweet already, I just left mine plain. Of course if it were someones birthday and this was a surprise, you could frost them for the ultimate breakfast birthday cake.
