Bran muffins made with eggs, honey, raisins, seeds and buttermilk





These bran muffins began with the recipe on a bag of Shiloh Farms organic unprocessed bran as a guide. The picture above shows you the start of the process, with seeds toasting and bran soaking up hot water. Given what's in these treats, they must be good for you!

Ingredients * 1 cup coarse bran * 1 cup boiling water * 1/4 cup honey * 1/4 cup canola oil * 2 lg eggs * 1 1/2 cup whole wheat pastry flour * 1 cup buttermilk * 1 cup raisins * 1 cup mixed sunflower, sesame, pumpkin and flax seeds * 1 1/2 tsp baking soda

Add the boiling water to the bran and set aside for 10 minutes. in another bowl, mix honey oil and eggs. Then add flour and baking soda, alternating with buttermilk. Finally mix the bran, raisins and seeds all together to form a batter.

Fill your greased muffin tin 3/4 full and bake at 350 degrees for 20-25 minutes, depending on your oven. Makes 12-15 treats. Remove from oven and allow to cool.

Now this is the hard part. To frost or not to frost, that is the question. If you are a spartan type, hungering for a muffin so healthy you will get bonus points from your personal trainer, go with a bare bun. If, on the other hand, these are meant for a roving band of teenagers that occassionally call your place home, then frost 'em. Or go 50/50 with half frosted and half bare.
