Blueberry biscuits are rich, moist, tender and full of berries!



These blueberry biscuits were inspired by a recent trip to Florida. As we drove down through the Carolinas, we saw a Bojangles fast food joint advertising biscuits with blueberries. Well, I just had to stop to try one (the fried chicken there wasn't bad either).

When we got home, a week later, it was time for my own version of this southern treat.

Ingredients * 2 cups flour * 1 cup blueberries * 1 cup sour cream * 4 Tbsp butter, cold * 1/4 cup milk * 1/4 cup sugar * 1 tsp baking powder * 1/2 tsp baking soda * 1/4 tsp salt



Sift the dry ingredients together, then cut in the butter to a coarse crumb texture. Next, add the milk, sour cream and berries. Stir until dough comes together, then spoon out 6-8 good sized clumps. Top each with a sprinkle of sugar and put on a greased sheetpan. Place in a preheated 425 degree oven for about 15 minutes, until lightly browned. Remove from heat and place on a rack to cool.
