Biscotti are biscuits gone Italian!
OK, let's say you've got the urge to bake, something easy, not too complex....how about biscotti! These treats are quick and easy to make and can be enjoyed with coffee or tea or just by themselves. Your friends and family will think that you're a regular gourmand when you serve this home made treat. As always, you start with a few simple ingredients...

This is a basic Italian style biscotti recipe from the 'King Arthurs Cookie Cookbook'. Once you have the steps down, and an hour to spare, you can vary the flavor in dozens of ways. Start by mixing 2 eggs, 2/3 cup sugar, 1 tsp. vanilla extract, 1/2 tsp.salt & 1/2 tsp. baking powder.
Next, add your 2 cups of flour and mix the dough gently until it all comes together. Put the mix on a greased sheetpan and form into a 3 inch wide by 14 inch long flattened log. That goes in your preheated 350 degree oven for 25 minutes.

After 25 minutes, remove from the oven and let cool for 10-20 minutes. Then cut the loaf into 12-15 pieces, separate them, and put the pan back in the oven for 25 minutes at 325 degrees. The last step is to remove your treats from the oven and let them cool on a rack.
