Big biscuits become burger buns!



Big biscuits are great - I mean, the bigger the better, right? Anyway, I needed buns for some burgers we were going to grill and didn't really want to go to a grocery store at dinner time. The lines are scary at most places, and as I found out, the closest Walgreens didn't have any rolls. I figured I'd do what I do best, bake some.

I borrowed some guidelines from a recipe called 'whipping cream biscuits' and changed it up a little. Here is the simple list of ingredients I used:

*2 cups self-rising flour * 1 tsp baking powder (extra lift) *1 tsp salt * 2 tsp sugar * 1/2 cup heavy cream * 1/2 cup buttermilk



Mix the dry ingredients (sifted), then add the wet stuff. Mix again lightly and knead 6-8 times on a floured board. Now, instead of punching out a dozen biscuits, go for the jumbo size buns and divide the dough in quarters. Wow, these are jumbo sized!Bake 12-14 minutes at 450 degrees.



Remove your buns from the oven and allow to cool a bit. Then, using a fork, open the buns from the side, like you would with an english muffin. When your burgers are ready, lay one on your big biscuit, add your favorite condiments and call it a meal...Yummy!
