Banana cakes that look like twinkies...and taste like the original Hostess treat





Banana cakes that resemble twinkies are a great treat for the tropical fruit fanatic in your household. This all started because I had a bunch of bananas that were verrry ripe. I found a recipe for a cake in "The Moosewood restaurant Book of Desserts" and changed it up by simplifying it, leaving out bourbon and other things. Did you know the original twinkie was filled with banana creme?

Ingredients: * 1 stick butter (room temp) * 1 cup sugar * 3 eggs * 5 ripe bananas * 2 tsp vanilla extract * 2 cups flour * 1 tsp baking soda * 1 tsp baking powder * 1 tsp salt

Cream the butter and sugar, then add eggs one at a time. Add the mashed bananas and vanilla. In a bowl, sift together dry ingredients and add to the fruit mix. Stir to bring it all together and pour batter into a cake pan (pans) of your choice.



Bake at 350 degrees for 20-25 minutes, depending on your oven, rotating the pan halfway through bake time. Remove from the heat and cool for 15 minutes on a wire rack, then frost the loaves with your homemade buttercream frosting. Leave some without frosting if you prefer a less sweet treat. Just give'm a dusting of confectioners sugar.
