We had applecake to celebrate Chinese New Year!



Applecake, sounds tasty, doesn't it? You bet it is, especially when you get one at a bake sale from the local Hospital. It was moist, fruity, sweet, big (8" X 12") and heavy - lots of apples. To finish it, my daughter grabbed a tube of decorators frosting and added the appropriate piggy to signify the Year of the Pig - Happy Chinese New Year, everybody! Hey, I think she did a great job, don't you?



The bake sale 'Romanian Apple Cake' came with this recipe:

5 peeled, cored apples cut in 1 inch wedges, 3 eggs, 1 1/2 cups white sugar, 3/4 cup applesauce, 2 tablespoons water, 1 teaspoon ground cinnamon, 1 tablespoon vanilla extract, 2 cups all-purpose flour, 3/4 cup chopped walnuts (optional)

1. Preheat oven to 350 degrees. Grease and flour a 9x13 inch pan. 2. In a large bowl, whisk together the eggs and sugar until blended. Mix in the baking soda, applesauce, water, cinnamon, and vanilla. Stir in the four, just until incorporated. Fold in the apples & walnuts.3. Pour batter into prepared pan. Bake for 55 minutes. May be served warm or room temperature.

GLAZE: Melt 1/2 cup margarine or butter over low hear. Stir in sugar & cinnamon to taste and desired consistency. Pour over slightly warm cake.
