This apple cake gets rave reviews!







The round apple cake pictured above was prepared by my sister-in-law (code name Rocky) for the Jewish holiday Rosh Hashanah last fall. Here's the recipe:

4-5 apples, peeled & sliced; mix with 3 tbsp sugar and 2 tsp cinnamon, set aside. Use your favorite baking apples such as winesap, rome & cortland.

In a mixing bowl add 2 cups sugar, 3 cups flour, 4 eggs, 3 tsp baking powder, 1 cup oil, 1/2 cup orange juice, 1 tsp salt, 1 1/2 tsp vanilla. Mix on low for 10 minutes.

grease and flour a tube pan, preheat oven to 350 degrees. add 1/2 the batter to the pan, then 1/2 the apples, followed by the rest of the batter, then the remaining apples. "Make it pretty" as my sister-in-law said.

Bake at 350 degrees for 90 minutes, allow to cool before serving.
