Irish Whiskey cake for your special St. Patty's Day

When I decided to make Irish Whiskey cake, my first stop was the local liquor store for a bottle of Bushmills whiskey. It was St. Patrick's Day, afterall, and the recipe from "The Complete book of Baking" called for 2 cups of the best. I also had to pick up a few other items before preparing this very special dessert.
Ok, that's 3 cups golden raisins, 3 cups regular raisins, 2 1/2 cups brown sugar, 2 cups black tea and 2 cups Bushmills (or other) whiskey. Stir it all together and soak this overnite so that the dry fruit is totally saturated with happiness. Ah yes, the luck of the leprochauns!

In the morning, add 3 cups flour, 3 eggs, 1 Tbsp baking powder and 2 tsp. pie spice (apple or pumpkin). Mix it all together and put in a 9 x 5 loaf pan, 8" cake pan or 8 x 8 brownie pan that you've lined with parchment paper. Preheat the oven to 375 degrees. ...now where's my Bailey's for my morning coffee?

Take the cake out of the oven after 1 hour and let it cool for a while before removing from the pan to a wire rack. When you're ready, slice into pieces and serve it up. My wife says it would be great with Vanilla Ice Cream or whipped cream. Sounds good to me!
